吃膩了蘋果派, 心想還有一些蘋果能做什麼呢? 又上了網搜尋其他關於蘋果的食譜, 根據眾多人說讚的review, 決定來試做蘋果蛋糕.

Serving: 1 – 9×13 inch cake
Ingredients (仍是參考他人經驗調整過的)
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup white sugar
- 3 tps ground cinnamon
- 1/2 tps salt
- 1 tps vanilla extract
- 2 cups all-purpose flour
- 1 tps baking soda
- 4 cups apples – peeled, cored and diced
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch cake pan.
- In a mixing bowl, beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
- Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 ~ 60 minutes (depends on oven) or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners sugar or with a cream cheese frosting.
雖然說上面要灑糖粉或frosting, 但因我本身就不愛這兩種東西, 所以我單只做了蛋糕, 最後這步驟我就省略了. 這蛋糕的口感外層crispy, 裡面溼潤且柔軟. 話說我家老爺只喜歡吃布朗尼, 但吃到這蘋果蛋糕, 竟然自己要求要帶去公司當點心吃, 邊吃還邊用MSN跟我說, 真是讚!
