Harvest baking ~ Apple Cake

吃膩了蘋果派, 心想還有一些蘋果能做什麼呢? 又上了網搜尋其他關於蘋果的食譜, 根據眾多人說讚的review, 決定來試做蘋果蛋糕.

Serving: 1 – 9×13 inch cake

Ingredients (仍是參考他人經驗調整過的)

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 3 tps ground cinnamon
  • 1/2 tps salt
  • 1 tps vanilla extract
  • 2 cups all-purpose flour
  • 1 tps baking soda
  • 4 cups apples – peeled, cored and diced

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch cake pan.
  2. In a mixing bowl, beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
  3. Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
  4. Bake at 350 degrees F (175 degrees C) for 45 ~ 60 minutes (depends on oven) or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners sugar or with a cream cheese frosting.

雖然說上面要灑糖粉或frosting, 但因我本身就不愛這兩種東西, 所以我單只做了蛋糕, 最後這步驟我就省略了. 這蛋糕的口感外層crispy, 裡面溼潤且柔軟. 話說我家老爺只喜歡吃布朗尼, 但吃到這蘋果蛋糕, 竟然自己要求要帶去公司當點心吃, 邊吃還邊用MSN跟我說, 真是讚!
